Torta del Casar DOP. The classic DOP raw Merino sheep torta matured min 60 days. It takes the milk from a herd of 20 sheep to make 1 kg. Very dense, creamy, puddingy. Wild thistle is used in place of rennet which gives a subtle bitterness. Vegetarian/kosher/halal
